I only have the 20th Anniversary Edition and would like to expand.
What expansions would you recommend to complement the 20th Anniversary Edition?

I recommend the two first expansions ("inns & Cathedrals" and "traders & builders"), they really improve the game.

You'd have two versions of the base game, but with the two first expansions and 9 mini expansions.

I agree that getting the Big Box (2021) may be your best option, but don't overhype it with 9 expansions, corinthiens13: it includes 7 expansions and 2 lies. Both The River and The Abbot are inspansions always included with the base game, so they are not true expansions in the context of someone already owning a copy of the Anniversary Edition.
Still, definitely get the Big Box or perhaps wait until mid-next year when the expansions will inevitably all be re-released with the new tile design (boxes will probably be different too). In the meantime, you can buy The Peasant Revolts, The Signposts, or The Gifts from Cundco.de, the first two of which are already in the new style and the last doesn't matter.

Any issues with getting the French language edition of the Big Box 2021 if I don't read French? I am guessing not as all the instructions are here but just double checking.

Hi Hobbitses, welcome to the forum, glad you made it over here from BGG.
All the expansion components are language independent, which means you can buy from anywhere. It's only the rules that will be in the language of origin.
The Big Box 2021 rules aren't available in English yet, but all of the expansions have been previously released, in fact it's identical to the last big box. The artwork has been slightly refreshed, and perhaps there's some minor rule tweaks.

Don't rush to order the French one, unless you're French, or need it in time for Christmas. The German edition is releasing in the next week or so. You'll have more retailers to choose from. I suspect the English edition from Zman won't rear it's head until mid 2022.
Also, where are you based, local Carcassonne players may be able to recommend the best places to order from.

@Decar, So if it's identical to the last big box, then why again are they releasing it as "new for 2021"?

BB7 is in terms of gameplay basically the same as BB6, which in turn was in gameplay basically the same as BB4.
So as long as they make these small changes to artwork, they at least don't have to worry about which compilation to make. This seems to be their winning one
