As you mentioned, above the brief rules say: "You earn 3 points for the sheep on this tile if you guide your flock to the stable. A wolf cannot scare these sheep away."
C2 sheep upside down...
In this case, this means:
* The three sheep are added to the flock of any shepherd(s) placed on the same field and can be scored by any shepherd guiding its flock to the stable.
* If you draw a wolf, you will remove your shepherd and any other shepherd sharing the same field along with all their shared sheep but these three printed sheep, if also part of the flock. Should this happen, no points will be scored.
So the printed sheep work as a bonus for the shepherd(s) in the same field when scoring. Nothing more sophisticated than that.
C1 has some printed sheep too as Bumsakalaka mentioned:
