The best way is to collect only C1 
C1 also had this. It was the reason the bag was introduced in T&B to begin with. And if not for production differences, over time wear and tear and sun exposure can do the same. Unfortunately it's not something you can easily avoid, and with the production process being spread out, it can (and likely will) happen everywhere Try not to memorise specific shades of grey I'd say

Actually, especially on C2 boxes, the darker, oversaturated colours are a big giveaway for it being a knock off. There are a lot of these out there, and unfortunately not always as easy to see.
For now, I've seen knock offs of the Base game (C1 and C2) and only a few expansions (mainly a couple of expansion compilations). There are also some that have adopted a different name, but are clearly Carc knock offs. I'll see if I can do a post about all of these, just need to grab all of mine together and write it up nicely

All legitimate Carcassonne should have wooden pieces. Did you buy yours second hand? Or potentially you got a knock off reproduction. There are a few of those known to have (bad) foam meeple.

My thought is more with the festival in Carcassonne in mind. I expect that there they'll have the first 3 as a pre-release, and then maybe the full set in time for Essen

Nothing confirmed on that point. Not sure if they'll do them all at the same time.
From what I've seen, they'll have exp 1, 2 and 3, and we'll have to find out if there's more released at the same time

Here are pictures from the front and back of the 20th anniversary editions. You'll see that the lighting makes a big difference on how the front looks.  And all the fronts look the same, even though these are all from different publishers/languages

Fun fact, those images need updating. My Finnish version doesn't have the Lautapelit logo on the front. And from what I've seen, the Russian box has 'Carcassonne' on the front, with the Cyrillic title on the side. (Although it has KJW's name in Cyrillic)

Yes of course! I'll try to remember to do so tomorrow. The downside of this edition is that you cant tell the different language versions apart from eachother from the front of the boxes, which is too bad as I've got some real beauties hahaha

I've got about 15 different copies of the 20th anniversary edition, from different countries/languages/publishers, but I have not seen any major differences in the colour intensity between them.
I agree with Paloi that the colours shown on the reddit post are exaggerated. Looks like someone upped the intensity in post. The colours do stand out to me on the boxes, but maybe not as much as you had expected or hoped.
Then the map is indeed a bit odd; these are usually sold as separate product, but it looks like they used it as packing material for your order
