Thanks for this analysis, great job! Everything makes sense, but for me, the ONLY thing that matters are "Clipped buildings at city edges"  ;)
so for me Peasant Revolts is C3

Round corners vary on publisher and print run. There are a few early v2.1 editions that have rounded corners, so I don't think it can be used as a differentiator.
I think the best metric for v3 is any tile that Marcel Gröber was involved with the design of.  There's a definite shift in design when they joined the team.

images of cities has not dark roof on cards (at least on promo picture) but Monastery is new design
Check JCloisterZone Add-ons with fan expansions and also some Slovak sci/fi projects in English https://www.scifi.sk/en/

Halflings has the first incursion in overflowing cities, as you can see here. It does not happen to all the tiles...

Black roofs appeared with the 20th Annivesary edition. The C3 base game = 20th Anniversary Edition - flags - Easter eggs.

I consider it a transition phase... ;)

A printing error would shift the image horizontally or vertically, but if you check the buildings next to the coat of arms, you can see the overflow is intentional... And the opposite tile also has overflowing roofs...

Do we know which designs Marcel Gröber worked on?

I wouldn't consider the Maps as expansions to Carcassonne in (v1 or v2), they're more of a spin-off because only 1 (or 2 in the USA) case can be played at the same time; and it changes some of the core rules of Carcassonne, by limiting where tiles are played.  Although they are listed as a mini-expansion on Cundco, so shows what I know.

And if I recall correctly, 2014, 15,16 and 17 were printed at the same time on the same tile sheet. So it would make sense for a noticeable change to occur for 2018.

All Spiel tiles to date have the usual corners... They are C2.0 (2014-2017) and C2.1 (2018-2021).

The C2.0 Spiel tiles were printed in 2x2 frames, the tiles for the four years in one go. I saw a picture of the frame on CarcF some time ago but couldn't find it again.
