It seems to be more widely available from October indeed. For now only expected in Germany, but the wider release will probably make it easier to order from outside of Germany

One question about something that I didn't understand, sorry if this has been discussed already: the old version of the game DOESN'T include the winter river expansion, while the version that will be released in october will? Is this correct?

I’m not sure what you mean, it looks like the new version (both the front cover and the back which also shows the river tiles). Some places seem to have started selling it recently.

Yes, if you get that, you should be getting the latest version (2020), with the River included.
The Winter Edition has always had 12 more tiles than the normal game. It has the standard 72 tiles, plus 12 tiles with winter animals. However, there are no separate rules for them.

This version (the 2020 version) has the river on top of that.
I would call this the re-release of the 2020 version, but of course let's not try to confuse ourselves with the namings.

The website you refer to has the 2020 version listed, including the river edition. Asmodee DE said that it is expected to be released in October, but perhaps some shops have already gotten stock.
I doubt that it would be the 'normal'/'old' winter edition, as that has been out of print for several years already.
