Is there a set of rules somewhere for playing carcassonne as a team?
Or do we consider each team as a player?

Nothing official.  You should take a look at the Carcassonne Star Wars spin-off through.

Most Team variants I've tried are 4 players.  Were people alternate, their turns and just sum their scores together.
