As far as expansions with unique features goes, I own everything except Crop Circles 1 (the new Castles is on the way). I don't really count Cathars because I own siege and the tiles are the same. The different iterations of Windroses, and Cult Places fall into the same category for me. That being said, I still have not had an opportunity to play with all of them. Below is the list that I own and have not yet played. What's on your list?
Bridges, Castles, and Bazars (I have only played with the bridges)
Windroses
Plague
Crop Circles
Festival
Little Houses
The new Klosters/Kloosters

Good question! I own all the ones below.
Princess and Dragon – wife won’t like it – at all
Messengers – doesn’t sound appealing to me
The Count – seems cumbersome
Catapult – not practical imo
Robbers – not that interested in the mechanics
The Tower – the one I would most want to play but our game is too long already, (we don’t separate our pieces – only play a mega game). If we want a shorter game we play a spin off or iPad).

I'v had several expansions that took a while before trying, but the only one I have now that I didn't try, is the plague.

I've played every expansion at least twice except Darmstadt and Castles. And the only reason I've only played those two once each is because those were the last two games I've played of Carcassonne and I haven't had time for more plays!
On a related note, my review of Castles should be out tomorrow sometime...if I remember to do it, that is. ;)

Hopefully once I get my storage box next weekend it will make everything I own more accessible and I'll get around to playing all of these (except Catapult of course).

I'v had several expansions that took a while before trying, but the only one I have now that I didn't try, is the plague.
My partner and I like the Plague so we've played it a few times. Most people don't seem to like it though.

For me, it's been two. I got them mainly just to have the tiles. :))

I'm quite hesitant to play with The Plague, as it's the 'middle child' of Dragon, Tower and Crop Circles. Any suggestions? I was thinking that we shouldn't mix it with too many expansions and rules but don't know how others may have gotten around this. Also, we are yet to play with The Catapult and The Houses, but those we quite look forward to!

Personally, I like the Plague. It's not really designed to be played with a lot of other expansions, but there are some good ideas of what expansions you can use with it in this thread (http://www.carcassonnecentral.com/community/index.php?topic=1527.0).

I have all the major expansions and a few of the the smaller ones, plus all the spin-offs. Only ones never played:
Catapult - Probably no surprise there!
Bridges Castles and Bazaars
Count King And Robber - Have played Count in mini format.
I also have Wheel of Fortune and not played.

Bridges and Castles are pretty fun to do.
the only thing i dont like is that a farm continues under the bridge, creating insane big farms.

For me, it's the Plague. Possibly the only expansion that my Wife doesn't want to play!

Oeh, tricky one..
I own the Tower, but have only played it once when we were in Holland and played with my brothers set
I own the Festival, but bought it via marktplaats (dutch second-hand site), and my sister collected it for me so I didnt have a go at it yet.
Travel version same; my parents have that one now
Then I have the Robbers and the King&Robber (have used the 5 extra 'normal' tiles, but not the longest/biggest road/city) but never played them.
We've only played the WoF and the Catapult once (both yesterday!) and will probably use them again :P

I have not yet played The Catapult, nor Hills and Sheep.
I have all the minis except Mage & Witch but I have only played The Flying Machines.
Any suggestions as to what I should start with? I know everybody loves the Catapult.

6. The siege. (Played Besiegers though, if that counts)

Next time you play your wife, get out the Messengers. Mine really likes that expansion. Maybe it was because she was previously a math teacher and it reminded her of 3rd grade math games or maybe because she pulled the majority of the messages. It was better than I thought it would be.

Same here, although I used the Catapulttiles in a game without using the Catapult.

Fliers and Mage & Witch are my favourites, but I also like Goldmines. Ferries is universally well-liked but I've never played with it. And I've not played with Robbers or Messengers either.

Unfortunately my wife doesn't play Carcassonne (and hates math, which is part of the reason she doesn't like Carcassonne!).

Really? That's a surprise - Ferries is great. Expansions that increase the value of roads can add so much to the game.

Ferries is the best mini IMHO. If I could only own one mini, that would be it.

I have little house, the new cloisters from different countries, and windroses still in shrink wraps.
School houses affect only the beginning, and we play mega-carc, so it's not that interesting. I greatly appreciate the idea and effort to condense the two-tile-school-houses onto single tiles. (We are allowed to talk about those even though they are not published as fan-expansion, eh?)
Me and my friends tried messengers, ferries, robbers, the Count, bazaars, and castles (from the same big expansion as bazaars), but didn't like the mechanisms.
Seeing that I'm not the only one not getting along the count, I decided to come back and say more...
The count interrupts the game too much... When we tried that, we just put a meeple in Carcassonne, and every time some one finishes something, we have to ask everyone. To me, it's just a hassle and the worst element in the game. Other mechanisms are either not interesting or not interesting enough to us.

I must say, "The Plague" is probably the one, I'm most eager to try out. Unfortunately I didn't get anybody from my family yet to try it. I would also like to play more "Ferries". Only one game to date, and I liked it a lot!
